Juicy Cajun Chicken Skewers
These juicy and flavorful Cajun Chicken Skewers are one of my favorite easy chicken recipes! They’re perfectly seasoned with a delicious blend of spices, marinated until tender, and finished with a buttery herb glaze that makes them absolutely irresistible. Whether you’re making them for a quick weeknight dinner, a summer barbecue, or a family gathering, these chicken skewers are guaranteed to be a hit.
The combination of paprika, Cajun seasoning, tomato paste, lemon juice, and fresh herbs creates a smoky, tangy, and slightly spicy flavor that pairs beautifully with fluffy rice, roasted vegetables, or a fresh salad.
Step 1: Prepare the Chicken And Make the Marinade
If you’re using chicken thighs, remove the bones and trim any excess fat. Cut the chicken into medium-sized cubes. If you’re using chicken breasts, simply cut them into evenly sized pieces
In a large bowl, mix the tomato paste, dried parsley, garlic powder, paprika, salt, turmeric, Cajun seasoning, olive oil, and lemon juice.
Add the chicken and toss until evenly coated. Cover and marinate for at least 30 minutes, or up to 3 hours for the best flavor.
Step 2: Assemble the Skewers And Cook the Chicken
Thread the marinated chicken pieces onto your skewers, leaving a little space between each piece so they cook evenly.
Heat a large skillet or grill pan over medium-high heat with a drizzle of olive oil. Cook the chicken skewers for about 10 to 15 minutes, turning them regularly until they are beautifully golden on all sides and fully cooked through.
Step 4: Make the Butter Herb Glaze
In a small saucepan, melt the butter over low heat. Stir in the chopped fresh coriander (cilantro).
If you enjoy a hint of sweetness, add 1 teaspoon of honey and mix well. This step is completely optional but adds a delicious caramelized finish and remove the saucepan from the heat.
Generously brush the warm butter glaze over the cooked chicken skewers just before serving. Serve immediately with rice, fries, grilled vegetables, or your favorite dipping sauce.

Ingredients
- 3 boneless chicken thighs or 2 large chicken breasts cut into cubes
- 1 tablespoon tomato paste
- 1 teaspoon dried parsley
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon turmeric
- 1 teaspoon Cajun seasoning
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 10 g butter
- 2 tablespoons chopped fresh coriander cilantro
- 1 teaspoon honey
Method
- Cut the chicken into bite-sized pieces.
- In a large bowl, mix the tomato paste, dried parsley, garlic powder, paprika, salt, turmeric, Cajun seasoning, olive oil, and lemon juice. Add the chicken and toss until evenly coated. Marinate for at least 30 minutes.
- Thread the chicken onto skewers.
- Heat a lightly oiled skillet or grill pan over medium-high heat. Cook the skewers for 10โ15 minutes, turning occasionally, until golden and fully cooked.
- Melt the butter in a small saucepan. Stir in the chopped coriander and, if desired, the honey.
- Brush the butter mixture over the cooked skewers and serve immediately.
Notes
Chicken thighs stay juicier than chicken breasts.
For extra tender chicken, add 1 teaspoon of cornstarch to the marinade before mixing. It helps keep the chicken incredibly juicy and soft.
